just purchased a left handed Remington 870 and I plan on converting it to a tactical setup.

Sounds like a cool project. Not a lot of people use the left-handed platform for tactical builds, but it can be done with a little creativity, and you'll have a fairly unique gun.

I plan on adding an 18 inch police barrel with rifle sights, knock the back site off and just use the front blade sight, for the rear sight I want to use the LPA BAR Tactical Series Ghost Ring Rear Sight on a Leapers Tactical Picatinny Rail Scope Mount as it is clearance on both side to eject rounds. I want to add the Nordic Components +2 Magazine Extension with tube clamp that has the picatinny rail on it.
for a stock/pistol grip I am considering a phoenix technology kicklite stock (not sure on that yet) and the black magpul front forearm. thats about as far as I have got on my planning still looking at parts and doing research on what works and what doesnt.
suggestions???

I did have a couple thoughts on that rail. First, it's a raised rail that allows an optic to be mounted while still permitting use of low-profile iron sights on the barrel. It's a nice feature, but if you're just using it to mount other iron sights, it's a bit redundant. Second, since it's mounted by replacing the trigger pins and takes up a lot of space on each side of the receiver, it'll stop you from using pretty much any receiver-mount shell carrier. If you want one of those, you'll be limited to stock-mount options.
My suggestion would be to just tap your receiver to accept a standard Picatinny top rail, or a rail/rear GR sight combo part like those used on the Tactical 870s:

This would be a much simpler setup that would add less weight and bulk, provide a more secure mounting, simplify take-down & reassembly, and allow you more flexibility in sights and other accessories.
For shell carriers, there are more options for a left-handed build than one might think. The fabric, velcro-attached units would probably be simplest; but some of Mesa Tactical's products can be used on LH receivers, and any TacStar sidesaddle could be pretty easily flipped around with a simple bit of tap work.
Other than that, furniture and most of the usual internal upgrades are no different than on a RH 870. One of the toughest parts of a LH 870 build is the barrel, but you already started a thread on that, so I'll let that discussion happen there.
