Still working but not on the line. I'm a culinary teacher here in Dallas. Do classes every night. I'm 61 and probably retire in year or so. I'm career changer... went to Culinary School about 15 years ago after a career in hi-tech (Silicon Valley, then Dallas) so culinary is my second career. Not as lucrative but it sure is a lot more fun!!Scorpion8 wrote: ↑Wed Feb 19, 2020 6:29 pm Good info. So it seems like the "professional chef" market is booming on YouTube. I subscribe to a Brit chef named John Kirkwood that does online recipes from his restaurants that are all Brit comfy food like raised meat pies. The Great British Baking Show is another favorite of ours. You still working as a chef or retired?

Why?!? There's one thing about hot sauces, they need to add flavor. Not just pain. If that's all I wanted I'd offer to go a round with Mike Tyson with my hands tied behind my back. IMHO if it's not adding flavor and taste, then GTFO of my food.

It does add some taste but not an overpowering taste. That is one of the main reasons that I love it. Plus it does not have a bad aftertaste. It is not really that painful to me for some reason. I just love really hot "Hot Sauce"!
