You can always order a brand new Police set, but that tends to be spendy.
The number of listings for Police furniture on online auction sites tends to wax and wane, so it's worth checking frequently if you're looking for a set.
I was just looking through Ebay, and there are currently at least a dozen different listings for wood Police furniture, in every condition from cherried to thrashed (personally, I prefer the look of beat-up Police wood). You may have to watch some auctions, but there were quite a few that you should be able to get a fair price on.
Be aware that not all auctions will include all of the stock hardware (recoil pad/buttplate & screws, sling stud, stock bolt & washers, and bearing plate), so you may need to get those separately. Those odds and ends are pretty easy to find though. If nothing else, you should be able to order all of those parts directly from Remington. When I got my Police furniture as a gift, it didn't come with the bearing plate, but my gunsmith happened to have one lying around that he sold me for a few bucks.

BTW, I think I may end up going with the Hogue stock and forend.
Any thoughts on them? I find the stock forend somewhat abrasive when working it quickly.

I have a Hogue pistol-grip I use for playing around with, but I'm not sure I'd like to have a full stock & fore-end with that same rubber covering them. I can see it grabbing clothing far too easily.
