The Terminator comes first to mind for me, theres the scene where he assaults the police office ("I'll be back"), and the scene at the gun store, where loads the gun and shoots the clerk ("Hey, you can't do that" "Wrong")
I guess they are never used on the movie, but when I was a kid I used to admire the Franchi's in Jurassic Park
There have been some pretty gnarly scenes in Boardwalk Empire too

While it was not a good movie by any standards, "Hobo With a Shotgun" had lots of Rem 870 action. In fact the Remington 870 co-starred with Rutger Hauer.

"Way of the Gun" had some great 870 action with some pretty realistic shotgun movement and handling.

Sarah Connor (Linda Hamilton) taking out the T-1000 Terminator (Robert Patrick) in the "Terminator 2: Judgement Day" is pretty kick arse!!

My all-time favorite movie that has weapons in it, but not any shotguns, is "Full Metal Jacket." Our DI's took us to see "Full Metal Jacket" at the Parris Island theater the day before graduating as full-fledged jarheads.

There are some good shotgun scenes in "max payne". I can't remember which models but good none the less

Terminator 2 has some of my favorite shotgun moments, both with that classy lever-action 10ga Winchester 1887 the T-800 appropriates from the bar owner, and with the 870 Sarah employs during the film's climax. There are quite a few other shotguns in that film, but those two are the stars.
I also get a kick out of Ben Doyle's shotgun-handgun in Lightning Jack.

Oh yeah, and you can't get much more quotable than Ash's "boomstick" speech in Army of Darkness.
