Remington says it's Shurshot 870 Thumbhole Stock is 12 ga. only. Has anyone modified or adapted
it to an 870 Express 20 ga?

There are two 870 receiver sizes; large is used for 12, 16, and 20 gauges, small is used for light 20 & 28 gauges, and .410 (which is a caliber, not a gauge - technical nerd points!)
If you have the heavy 20ga, it'll use the same furniture as a 12 or 16ga shotgun.
You should be able to figure out which 20ga you have by contacting Remington directly, but for reference, here are the general dimensions of the raised bearing piece that fits into the receiver, measured on my 12ga synthetic stock: If the bearing piece on your current 20ga stock has similar measurements, you should be able to use any 12ga furniture on it as well.
